in the gallery view there are currently only two sorting options:
Either according to the 'Ordering' from the Category Manager or in 'alphabetical' order.
The 'Ordering' in the Category Manager can be changed manually using Drag an Drop.
Is it possible to display these categories by dates?
Then you would have to put the categories in the desired order.

When I display the gallery from the frontend, the categories are ordered alphabetically if this option is enabled in the administrator configuration. The 'Ordering' in the Category Manager does not change the way they are visible on the screen.
I use Joomgallery to do photo reports by a lot of users who can upload their photos.
We do a different activity every day and for each activity I created a unique category. We have about 350 a year and these reports remain visible for many years.
We do not have the possibility of making albums, and the only way to quickly find a category (report) is to order them by date of creation.
I don't know if this possibility is possible by modifying the php code a little.

I fully agree with you, that some kind of sorting and/or priorisation of the categories would make sense. Especially in large galleries it would be nice to have more control on how subcategories in the gallery- and category-view are shown and sorted.
Feel free to open a Feature-Request on GitHub (Issue) and contribute code or money (bounty) to the issue. Since JoomGallery is an opensource project, we are relied to the users for new features and improvements.
